Description
Vegan pizzas are the main reason I managed to become a vegan, so here's an example:
Ingredients:
- 1 eggplant
- 1 small box of mushrooms
- 1 bought pizza dough (you can make it yourself if you want, but I don't have the time or space myself)
- 1 bowl of tomato sauce
OR
- 7-10 tomatoes
- 2 carrots
- 1 onion
- celery
- Enough olive oil to cover the bottom of your cooking pot.
preparation:
Making the tomato sauce yourself:
1) Cut the carrots, onion and (small piece) of celery into tiny pieces.
2) Peel the tomatoes and cut them into bigger pieces than the other veggies.
3) Stir fry the carrots, onions and celery for 15 minutes in your cooking pot on a small flame.
4) Add the tomatoes and add a lot of salt. The salt will remove the water out of the tomatoes, so you don't need add water.
5) Let the mixture cook on a medium flame while stirring it every two to five minutes. This should take about 30 to 40 minutes.
6) Add pepper or tomato paste if you want more flavour in your sauce.
Making the pizza:
1) Make the dough if you're using fresh ingredients
2) Cut the eggplant and mushroom into pieces. You can choose how big, though as you can see on the photo I don't use tiny pieces.
3) Add the tomato sauce to the dough. A nice coat of tomato sauce gives extra flavour, but don't let your ingredients drown in them. (I've done it before; I only tasted tomato)
4) Add the eggplant and mushrooms
5) Put the pizza into the oven: I put it in for 25 minutes at 175°. It gives a nice crispy pizza dough.
Serve! Bon appetit!
PS: you will definitely have leftovers. You should wait until the sauce has cooled down and then freeze it all for the next time. With these ingredients you can make around four to five pizzas, depending on how big they are. Enjoy!
